Ingredients

  • 150g (1 cup) plain flour
  • 1/2 teaspoon baking powder
  • 40g reduced-fat dairy spread
  • 1 1/2 tablespoons caster sugar
  • 1 tablespoon water
  • 1 egg white, lightly whisked
  • Melted butter, to grease
  • 70g (1/3 cup, firmly packed) brown sugar
  • 1 teaspoon ground cinnamon
  • 4 Granny Smith apples, peeled, cored, cut into thin wedges
  • Plain flour, extra, to dust

Method

  • Step 1
    Combine flour and baking powder in a bowl. Use your fingertips to rub dairy spread into the flour mixture until it resembles fine breadcrumbs. Stir in caster sugar. Make a well in the centre and add the water and egg white. Use a round-bladed knife in a cutting motion to mix until evenly incorporated and the mixture begins to hold together. Use your hands to press the dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
  • Step 2
    Preheat oven to 200°C. Brush a round 20cm (base measurement) cake pan with melted butter to lightly grease. Line the base with non-stick baking paper. Sprinkle the base evenly with brown sugar and cinnamon.
  • Step 3
    Heat a large non-stick frying pan over high heat. Add one-third of the apple and cook, turning occasionally, for 2 minutes or until golden. Transfer to a plate. Repeat, in 2 more batches, with the remaining apple. Arrange the apple over the sugar mixture in the base of the pan.
  • Step 4
    Roll out the pastry on a lightly floured surface to a 20cm-diameter disc. Place pastry disc over apple and gently press to cover. Bake in oven for 30-35 minutes or until pastry is golden. Remove from oven. Set aside for 5 minutes before turning onto a serving platter. Serve immediately.
