  • 135g (3/4 cup) dried apricots
  • 85g (1/2 cup) dry-roasted almonds
  • 75g (1/2 cup) unsalted pistachio kernels, toasted
  • 110g (1/2 cup) red glace cherries
  • 3 x 55g bars Fry’s Turkish Delight, coarsely chopped
  • 4 x 180g pkts white chocolate, coarsely chopped
  • 1 teaspoon rosewater (optional)


  • Step 1
    Grease and line a 26 x 16cm (base measurement) slice pan. Combine apricots, almonds, pistachios, glace cherries and Turkish delight in a large bowl.
  • Step 2
    Place chocolate in a microwave-safe bowl. Heat in a microwave on medium, stirring every minute, until smooth. Cool for 2 minutes. Stir in rosewater. Quickly stir into apricot mixture until just combined. Pour into the prepared pan. Chill for 2 hours or until set. Cut into pieces.
