  • 60mls (1/4 cup) olive oil
  • 2 medium red onions, finely diced
  • 4 garlic cloves, finely chopped
  • 400g red lentils, washed, drained
  • 750mls (3 cups) Massel vegetable liquid stock
  • 2 bunches rocket, ends trimmed, washed, dried, torn
  • 1 bunch continental parsley, chopped
  • 2 lemons, rind finely grated, juiced
  • Salt & ground black pepper, to taste
  • 4 dinner rolls, to serve


  • Step 1
    Heat 2 tablespoons of the olive oil in a large saucepan over medium heat. Add the onions and garlic and cook, stirring occasionally, for 5 minutes or until softened slightly. Add the lentils and stock and increase heat to high. Bring to the boil and reduce heat to medium-low. Simmer, covered, for 10 minutes or until the lentils are just cooked but still hold their shape.   • Step 2
    Remove from the heat and add the rocket, parsley, lemon rind, lemon juice, remaining olive oil, salt and pepper. Toss well to combine. Taste and adjust seasoning if necessary.
  • Step 3
    Serve immediately with the bread rolls.
