  • 1.5kg (about 45) chat (small coliban) potatoes, scrubbed
  • 125ml (1/2 cup) olive oil
  • bunch fresh garlic chives, finely chopped
  • bunch fresh mint leaves, shredded
  • 2 small fresh red chillies, halved, deseeded and finely chopped
  • Salt & ground black pepper, to taste


  • Step 1
    Place the potatoes in a large saucepan and cover with plenty of cold water. Cover the pan and bring to the boil over high heat. Reduce heat to medium-high and cook for 20 minutes or until just tender. Drain and place in a heatproof bowl. Cover with foil and set aside for up to 4 hours. Combine the oil, garlic chives and mint leaves in a medium bowl and set aside.
  • Step 2
    Just before serving, stir in chillies to the oil and herb mixture, then add the oil to the potatoes and toss gently to combine. Season with salt and pepper. Spoon into a serving bowl and serve the potatoes warm.
