  • olive oil cooking spray
  • 6 thick (500g) extra-lean beef sausages
  • 1 cup couscous
  • 1 cup boiling water
  • 125g can chickpeas, drained, rinsed
  • 1 red capsicum, cut into 1cm pieces
  • 1 small red onion, halved, thinly sliced
  • 1 cup fresh flat-leaf parsley leaves
  • 1/2 cup raisins
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 garlic clove, crushed
  • 1 teaspoon ground cumin, (see note)


  • Step 1
    Spray a large, non-stick frying pan lightly with oil. Heat over medium-high heat. Cook sausages, turning occasionally, for 8 to 10 minutes or until browned and cooked through. Remove to a chopping board. Thickly slice.
  • Step 2
    Place couscous in a heatproof bowl. Add boiling water. Cover. Stand for 5 minutes or until liquid is absorbed. Using a fork, stir to separate grains.
  • Step 3
    Add sausages, chickpeas, capsicum, onion, parsley and raisins to couscous. Combine oil, lemon juice, garlic and cumin in a jug. Season with salt and pepper. Drizzle over salad. Toss to combine. Serve.
