  • 150g dried whole figs
  • 1/2 cup strongly-brewed espresso coffee
  • 2 tablespoons coffee liqueur (such as Kahlua or Tia Maria)
  • 1 cup pure icing sugar
  • 1/2 cup self-raising flour
  • 1 cup hazelnut meal (ground hazelnuts)
  • 4 eggwhites
  • 100g butter, melted
  • 100g good-quality white chocolate, grated
  • 2 tablespoons caster sugar
  • vanilla ice-cream, to serve

Method

  • Step 1
    Combine figs, coffee and liqueur in a bowl. Cover and refrigerate for 3 hours or overnight, if time permits.
  • Step 2
    Preheat oven to 180�C. Grease six 3/4-cup capacity Texas muffin holes. Sift icing sugar and flour together into a large bowl. Stir in hazelnut meal. Make a well in the centre. Gradually add eggwhites, stirring constantly with a metal spoon until well combined. Add butter and stir until well combined. Stir in chocolate.
  • Step 3
    Drain figs, reserving coffee mixture. Cut figs in half and arrange over muffin hole bases. Spoon chocolate batter over figs. Bake puddings for 25 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in pan for 10 minutes. Turn onto a wire rack.
  • Step 4
    Meanwhile, combine reserved coffee mixture and caster sugar in a small saucepan. Bring to the boil over medium-high heat. Reduce heat to medium-low. Simmer for 5 minutes or until sauce has thickened slightly.
  • Step 5
    Place warm puddings on serving plates. Top with ice-cream and drizzle with coffee sauce. Serve.
