2kg sweet potato (kumara), peeled, coarsely chopped

80ml (1/3 cup) fresh orange juice

60g butter

1/3 cup small sage leaves

115g (1 cup) walnuts, lightly toasted

1/2 teaspoon ground nutmeg
Method

Step 1Cook the sweet potato in a large saucepan of boiling water for 20 minutes or until tender. Drain and return to the pan. Mash until almost smooth. Add the orange juice and 40g of the butter. Mash until smooth. Season with salt and pepper.

Step 2Heat the remaining butter in the pan over medium heat until foaming. Add the sage and cook, stirring, for 2-3 minutes or until the butter is golden and the sage is crisp. Stir in the walnuts and nutmeg.

Step 3Spoon the sweet potato mash into a large serving bowl and top with the sage and walnut mixture.
