Ingredients

  • 2 cups SunRice Koshihikari sushi rice
  • 2 tablespoons caster sugar
  • 1/2 teaspoon salt
  • 1/4 cup sushi seasoning

Method

  • Step 1
    Place chicken in a shallow glass or ceramic dish. Pour over teriyaki mixture. Toss to coat. Cover. Refrigerate for 1 hour.
  • Step 2
    Meanwhile make sushi rice: Place rice in a fine sieve. Rinse under cold water, stirring with your hand, until the water runs clear. Drain well. Combine rice and 3 cups cold water in a large saucepan. Cover. Bring to the boil over high heat. Reduce heat to medium-low. Gently simmer for 12 to 15 minutes or until all water is absorbed and rice is tender.
  • Step 3
    Remove from heat. Stand, covered, for 10 minutes. Transfer to a large ceramic or plastic shallow dish.
  • Step 4
    Using a spatula, stir rice to break up any lumps. Sprinkle rice with sugar and salt. Gradually add sushi seasoning, lifting and turning rice, until seasoning is well combined and the liquid is absorbed. Cool to room temperature.
  • Step 5
    Heat oil in a medium non-stick frying pan over medium-high heat. Drain chicken from teriyaki mixture. Discard teriyaki mixture. Cook for 2 minutes each side until just cooked through. Transfer to a plate. Set aside to cool slightly.
  • Step 6
    Place sushi mat (see note) on a flat surface with slats running horizontally. Place 1 nori sheet, shiny-side down, on mat. Leaving a 1cm strip at edge furthest away from you, firmly press 1/3 of rice evenly over nori using damp hands (see note). Cover rice with plastic wrap. Carefully turn stack over so bamboo faces up. Remove mat and slide under plastic wrap. Arrange 1/3 chicken and cucumber along edge of nori closest to you. Using mat, roll up firmly to form roll. Unroll mat, keeping plastic intact. Transfer to a chopping board.
  • Step 7
    Using a very sharp knife and wiping knife after each cut, trim ends. Cut into 6 slices. Remove and discard plastic wrap. Repeat with remaining ingredients to make 18 pieces. Serve with soy sauce.
