  • 1/3 cup (80ml) teriyaki marinade
  • 2 tablespoon lemon juice
  • 3 teaspoons sesame seeds
  • 8 Coles RSPCA Approved Chicken Drumsticks
  • 270g packet soba noodles
  • 150g snow peas, trimmed, sliced diagonally
  • 1 tablespoon mirin
  • 1 tablespoon white vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon peanut oil
  • 2 cups (160g) red cabbage, shredded
  • 1 carrot, cut into long strips
  • 2 spring onions, thinly sliced diagonally


  • Step 1
    Preheat an oven to 200C. Line a large baking tray with baking paper.
  • Step 2
    Combine marinade, lemon juice, 2 tsp sesame seeds and drumsticks in a large bowl. Place on the prepared tray. Bake in oven for 40 mins or until chicken is cooked through.

    Meanwhile, cook the noodles in a large saucepan of boiling water for 5 mins or until tender, adding snow peas during the last 2 mins of cooking. Rinse under cold water and drain. Transfer to a large bowl. Add the remaining sesame seeds, mirin, vinegar, soy sauce and oil and toss to combine. Stir in cabbage, carrot and half the spring onion.
  • Step 4
    Serve chicken on the noodle salad. Top with the remaining spring onion.
