  • 2 tablespoons olive oil
  • 2 red onions, finely sliced
  • 1 1/2 tablespoons balsamic vinegar
  • 2 teaspoons brown sugar
  • Salt
  • Cracked black pepper
  • 2 chicken breast fillets
  • 8 x thick slices ciabatta bread
  • 1 bunch rocket, washed and trimmed
  • 4 slices Swiss cheese, halved
  • 2 vine-ripened tomatoes, sliced
  • 1/3 cup egg mayonnaise


  • Step 1
    Heat 1 tablespoon olive oil in a small frying pan over medium heat. Add onions. Cook for 8 minutes, stirring frequently, until golden. Add vinegar and sugar and season with salt and pepper. Cook for a further 3-4 minutes or until caramelised. Remove and transfer to a bowl.
  • Step 2
    Slice chicken in half horizontally. Using the same pan, heat remaining oil over low-medium heat. Cook chicken for 4 minutes each side or until cooked through. Remove and cool.
  • Step 3
    Meanwhile toast bread and top it with rocket, cheese, tomatoes, chicken and onion. Spoon over mayonnaise and top with remaining bread.
