Ingredients

  • 1 teaspoon peanut oil
  • 2-3 teaspoons red curry paste
  • 1 2/3 cups (400ml) coconut cream
  • 1 red capsicum, seeded and chopped
  • 100g green beans, trimmed, cut in half
  • 80g snow peas, trimmed
  • 2 x 250g packs firm tofu cut into 3cm pieces
  • 1 teaspoon fish sauce
  • 2 teaspoons lime juice
  • 1/3 cup coarsely chopped coriander

Method

  • Step 1
    Heat peanut oil in a wok or large non-stick frying pan over medium-high heat. Add the curry paste and cook, stirring constantly for 30 seconds. Add the coconut cream and cook, stirring constantly, for 2-3 minutes. Add the capsicum and beans and cook for a further 3-4 minutes or until vegetables are just tender.
  • Step 2
    Stir through the snow peas, tofu, fish sauce, lime juice and coriander and cook for a further minute. Serve with steamed rice and lime wedges.
