  • 2 tablespoons extra virgin olive oil, plus extra to serve
  • 1 large brown onion, halved, sliced
  • 3 garlic cloves, crushed
  • 1/4 teaspoon dried chilli flakes, plus extra to serve
  • 2 cups Massel vegetable liquid stock
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 80g baby spinach
  • 1/4 cup finely grated parmesan, plus extra to serve
  • 4 slices white crusty bread, toasted, to serve


  • Step 1
    Heat oil in a large, deep frying pan over medium heat. Add onion. Cook, stirring occasionally, for 5 minutes or until onion softens. Add garlic and chilli. Cook, stirring, for 1 minute or until fragrant.
  • Step 2
    Add stock. Bring to a simmer. Add beans. Reduce heat to medium-low. Cook, uncovered, for 15 minutes or until mixture thickens slightly.
  • Step 3
    Add spinach and parmesan to pan. Cook for 2 minutes or until spinach just wilts and parmesan is melted. Season with salt and pepper. Drizzle with extra oil. Sprinkle with extra chilli and parmesan. Serve with crusty bread.
