  • 3 teaspoons olive oil
  • 1 brown onion, finely chopped
  • 2 cobs polka dot corn, corn cut off the cob
  • 2 zucchini, chopped
  • 1 red capsicum, deseeded, chopped
  • 350g San Remo dried wholemeal spiral pasta
  • 425g can tuna in springwater, drained, broken into large flakes
  • 1/4 cup chopped fresh parsley
  • 1/2 lemon, juiced
  • Freshly ground pepper


  • Step 1
    Heat the oil in a large non-stick frying pan over a medium heat. Add the onion, corn, zucchini and capsicum and cook, stirring often, for 10-12 minutes or until the vegetables are tender.
  • Step 2
    Meanwhile, cook the pasta in a large saucepan of boiling water following packet instructions or until al dente. Drain well, reserving 1/3 cup (80ml) of the cooking liquid.
  • Step 3
    Add the vegetables, cooking liquid, tuna, parsley and lemon juice to the pasta. Toss well to combine. Season with pepper. Serve immediately.
