  • 440g (2 cups) caster sugar
  • 250ml (1 cup) water
  • 2 vanilla beans, split
  • 1 teaspoon vanilla extract


  • Step 1
    Combine the sugar and water in a medium saucepan. Stir over low heat until sugar dissolves. Add the vanilla beans and extract. Increase heat to medium and simmer, uncovered, without stirring, for 5 minutes or until liquid thickens slightly. Use a pastry brush dipped in water to brush down the sides of the pan occasionally. Remove from heat and set aside for 30 minutes to cool.

    Store in the fridge in an airtight container. Serve over ice-cream or use in milkshakes.
