  • 1 teaspoon finely grated lemon rind
  • 1/4 cup finely shredded fresh basil leaves
  • 2 1/2 tablespoons olive oil
  • 4 (125g each) veal medallion steaks
  • olive oil cooking spray
  • 2 1/2 cups frozen broad beans
  • 2 roma tomatoes, chopped
  • 1 red onion, finely chopped
  • 2 tablespoons lemon juice
  • lemon wedges, to serve

    Combine lemon rind, 2 teaspoons basil and 1 tablespoon oil in a glass or ceramic dish. Add veal. Turn to coat.
