  • 1 medium orange sweet potato, peeled, thinly sliced
  • 2 medium green bullhorn capsicums, halved, deseeded, thickly sliced
  • 1 tablespoon olive oil
  • 400g can chickpeas, drained, rinsed
  • 80g baby rocket
  • 1/4 cup French salad dressing


  • Step 1
    Heat a chargrill over medium-high heat. Place sweet potato and capsicum in a bowl. Drizzle with oil. Toss to coat.
  • Step 2
    Cook sweet potato and capsicum for 3 to 5 minutes each side or until charred and tender. Transfer to a bowl. Add chickpeas, rocket and dressing. Season with salt and pepper. Toss to combine. Serve.
