  • 2 (about 200g each) coliban potatoes, unpeeled, cut into 3cm cubes
  • 1/4 green cabbage, hard core removed, shredded
  • 60ml (1/4 cup) olive oil
  • 1/3 cup loosely packed finely chopped fresh continental parsley
  • Salt & freshly ground black pepper
  • 1 teaspoon sweet paprika
  • 75g (3/4 cup) dried (packaged) multigrain breadcrumbs
  • 1 egg, lightly whisked
  • 4 (about 100g each) veal schnitzels, cut in half crossways
  • 1 lemon, quartered, to serve


  • Step 1
    Cook potato in a saucepan of boiling water for 7 minutes or until tender. Add cabbage 2 minutes before end of cooking. Drain and return to pan with 1 tablespoon of oil and 1 tablespoon of parsley. Toss to combine. Season with salt and pepper, and sprinkle with paprika.
  • Step 2
    Combine breadcrumbs and 2 tablespoons of parsley on a plate. Place egg in a bowl. Dip a piece of veal in egg, then in breadcrumbs, pressing to coat. Repeat with remaining veal, egg and crumbs.
  • Step 3
    Heat remaining oil in a non-stick frying pan over medium-high heat. Cook veal for 3 minutes each side or until cooked through. Place on serving plates with the paprika cabbage and potato. Sprinkle with remaining parsley and serve with lemon wedges.
