  • 2 medium carrots, peeled
  • 5 green shallots, trimmed, cut into 6cm lengths
  • 1 red capsicum, deseeded, cut into thin strips
  • 35g (1/4 cup) unsalted roasted peanuts, chopped

Method

    Run a vegetable peeler down length of the cucumbers and carrots to form long ribbons. Cut green shallots into thin strips. Combine the cucumbers, carrots, green shallots and capsicum in a bowl.

    To make the dressing, combine garlic, ground chillies, fish sauce, lime juice and caster sugar in a small screw-top jar. Season with salt and pepper and shake well.

    Divide the vegetables among individual serving plates and drizzle dressing over. Sprinkle with peanuts and serve immediately
