  • 400g strawberries, hulled
  • 500g (4 punnets) raspberries
  • 300g (2 punnets) blackberries
  • 500ml (2 cups) boiling water
  • 440g (2 cups) caster sugar
  • 2 tablespoons chopped fresh mint
  • 1/2 teaspoon vanilla essence
  • Extra raspberries, blackberries & hulled strawberries, to serve
  • Fresh mint sprigs, to serve


  • Step 1
    Place the strawberries, raspberries and blackberries in a blender and blend until smooth. Strain the mixture through a sieve into a large measuring jug, pressing with the back of a large metal spoon to extract as much juice as possible. You should have about 1 litre (4 cups) of berry puree.
  • Step 2
    Place the boiling water and sugar in a medium heatproof bowl and stir constantly until the sugar dissolves completely. Transfer to a large, 3 litre (12 cup) capacity plastic container or non-aluminium dish. Stir in the berry puree, chopped mint and vanilla essence until well combined. Cover with a lid or foil and place in the fridge for 8 hours or overnight to set.
  • Step 3
    Use a metal spoon to roughly break up the frozen sorbet and quickly transfer to the bowl of a food processor. Briefly process until the sorbet has a smooth, soft icy texture.
  • Step 4
    Quickly return the sorbet to the dish, cover and return to the freezer for a further 4 hours or until it is completely set.
  • Step 5
    To serve, use an ice-cream scoop to scoop the sorbet into chilled serving bowls. Sprinkle with the extra berries and top with the mint sprigs.
