  • 2 x 100g cans smoked tuna in oil,drained
  • 3/4 cup (110g) self-raising flour, sifted
  • 310g can corn kernels, drained
  • 4 eggs, lightly beaten
  • 3 green onions, sliced
  • 1/3 cup (40g) grated low-fat cheddar cheese
  • 1/2 cup (125ml) olive oil
  • 3 teaspoons Dijon mustard
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped flat-leaf parsley

Method

  • Step 1
    Preheat oven to 180�C. Place corn, eggs, green onions, cheese, oil, mustard, herbs, tuna and flour in a large bowl and stir to combine. Spoon mixture into four lightly greased 2-cup capacity oven dishes.

    Cook for 20-25 minutes or until golden and cooked through. Serve with a green salad.
