Ingredients

  • 2 large (about 200g each) chicken breast fillets
  • 1/4 cup lime juice
  • 2 tablespoons brown sugar (or palm sugar)
  • 2 tablespoons fish sauce
  • 1 teaspoon finely grated ginger
  • 1 teaspoon sesame oil
  • 1/2 baby wombok, finely shredded
  • 2 small carrots, cut into matchsticks
  • 1/2 red onion, thinly sliced
  • 1/3 cup mint leaves
  • 1/3 cup Thai basil leaves
  • 1/3 cup coriander leaves
  • 1/4 cup toasted peanuts, coarsely chopped

Method

  • Step 1
    Place chicken in a large saucepan and cover with cold water. Season with salt and pepper. Place over high heat and bring to a simmer. Reduce heat to low and simmer, uncovered, for 10 mins or until just cooked through. Remove from heat and set aside to cool slightly. Transfer to a bowl and place in the fridge for 1 hr to chill. Finely shred chicken.
  • Step 2
    Meanwhile, combine lime juice, sugar, fish sauce, ginger and oil in a screw top jar and shake until well combined.
  • Step 3
    Combine chicken, wombok, carrot, onion, mint, basil and coriander in a large bowl. Drizzle with dressing and toss to combine. Divide among plates and sprinkle with peanuts to serve.
