  • Melted butter, for greasing
  • 1 bunch rhubarb, ends trimmed, washed, chopped
  • 120g (3/4 cup, lightly packed) brown sugar
  • 2 tablespoons water
  • 1 egg, lightly whisked
  • 30g (1 1/2 tablespoons) butter, melted
  • 150g (1 cup) self-raising flour, sifted


  • Step 1
    Preheat oven to 190�C. Brush 4 large 185mls (3/4-cup) muffin pans with the melted butter to grease.

    Place the rhubarb, sugar and water in a medium saucepan over medium heat. Cook, stirring, until the sugar dissolves. Increase heat to high and cook, uncovered, for 2-3 minutes or until the rhubarb is tender. Remove from the heat and pour into a large bowl. Stand for 5 minutes to cool slightly. Reserve 1/4 cup of the rhubarb mixture.
  • Step 3
    Add the egg and melted butter and mix to combine. Add the flour and use a large metal spoon to mix until just combined. Spoon the mixture into the greased pans. Bake in preheated oven for 18-20 minutes or until just cooked (the muffins will be a little wet in the centre because of the rhubarb).
  • Step 4
    Turn out and serve immediately with a little of the reserved rhubarb mixture spooned over each muffin.
