  • 2 tablespoons olive oil
  • 1 brown onion, coarsely chopped
  • 2 garlic cloves, finely sliced
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • Large pinch of ground allspice
  • 500g butternut pumpkin, peeled, deseeded, cut into 3cm pieces
  • 500g white zucchini, ends trimmed, cut into 1.5cm-thick slices
  • 1 x 400g can peeled whole tomatoes
  • 250ml (1 cup) Massel chicken style liquid stock
  • 1 x 400g can chickpeas, rinsed, drained
  • 100g (1/2 cup) couscous
  • 2 tablespoons currants
  • 1/3 cup chopped fresh coriander


  • Step 1
    Heat the oil in a large saucepan over medium heat. Add onion and garlic and cook, stirring, for 2 minutes or until softened slightly. Stir in the cumin, cinnamon and allspice. Add the pumpkin and zucchini. Mix until well coated in the spice mixture.
  • Step 2
    Add tomato and use a wooden spoon to combine. Add stock and chickpeas. Bring to a simmer. Reduce heat to medium-low. Cover and cook, stirring occasionally, for 15 minutes or until vegetables are tender.
  • Step 3
    Remove from heat. Stir in couscous and currants. Cover and set aside for 5 minutes to soak. Season with salt and pepper. Stir in coriander and serve immediately.
