  • 2 large (about 400g) zucchini, coarsely grated
  • 1 large carrot, coarsely grated
  • 4 eggs, lightly beaten
  • 1/3 cup (80ml) vegetable oil
  • 1 cup (150g) self-raising flour
  • 1/4 cup (20g) shredded parmesan or vegetarian hard cheese
  • 1 cup (80g) grated cheddar
  • Salt & freshly ground pepper
  • 1 large onion, cut into rings
  • Mixed salad, to serve


  • Step 1
    Preheat oven to 180?C. Lightly grease a 24cm (base measurement) loose bottom flan tin.
  • Step 2
    Combine the zucchini, carrot, eggs and oil in a large bowl.
  • Step 3
    Sift the flour over the vegetable mixture and stir to combine. Stir in the parmesan and cheddar. Season with salt and pepper.
  • Step 4
    Spoon into the flan tin and top with onion rings. Bake for 40-45 minutes or until golden. Serve with salad leaves.
