  • Melted butter, to grease
  • 1 x 100g pkt almond meal
  • 35g (1/3 cup) desiccated coconut
  • 80g (1/3 cup) caster sugar
  • 50g (1/3 cup) self-raising flour
  • 70g butter, melted
  • 3 eggs, at room temperature
  • 25g (1/4 cup) flaked almonds
  • 250ml (1 cup) bought vanilla custard
  • 1/4 teaspoon almond essence (Queen brand)


  • Step 1
    Preheat oven to 200°C. Brush four 200ml ramekins with melted butter to lightly grease. Combine almond meal, coconut, sugar and flour in a large bowl and make a well in the centre.
  • Step 2
    Whisk butter and eggs in a jug until combined. Pour into almond mixture and stir with a metal spoon until just combined. Pour mixture into ramekins. Sprinkle with almond flakes. Bake in oven for 20 minutes or until a skewer inserted into the centres comes out clean. Set aside for 5 minutes to cool.
  • Step 3
    Meanwhile, combine custard and almond essence in a jug.
  • Step 4
    Turn cakes onto serving plates. Serve with almond custard.
