  • 1/4 cup (60ml) olive oil
  • 1 small clove garlic, crushed
  • 4-6 beef T-bone steaks
  • 250g red cherry tomatoes, halved
  • 250g yellow teardrop tomatoes, halved
  • 6 bocconcini, sliced
  • 1/3 cup (50g) Kalamata olives
  • 1/3 cup basil leaves
  • 3 teaspoons sherry vinegar


  • Step 1
    Combine half the oil, garlic, salt and cracked black pepper. Place the steaks in a large dish and pour over the garlic mixture, turning the steaks to coat. Cover and refrigerate for 15 minutes.
  • Step 2
    Meanwhile, heat a barbecue grill to high heat. Drain steak from the marinade. Place on the grill and cook for 3 minutes each side (this will give a medium centre) or until cooked to your liking. Remove, cover and keep warm.
  • Step 3
    Combine tomatoes, bocconcini, olives and basil in a serving bowl. Place remaining oil and vinegar in a small non-metallic bowl and whisk together. Drizzle over the salad and serve with the steak.
