Ingredients

  • 4 pork loin medallions
  • Olive oil spray
  • 1/2 pineapple, peeled, cored, halved lengthways, thinly sliced
  • 200g grape tomatoes, halved lengthways
  • 2 Lebanese cucumbers, peeled, halved lengthways, thinly sliced
  • 80g (2 cups) watercress sprigs
  • 2/3 cup fresh coriander sprigs

Method

  • Step 1
    Preheat a frying pan over medium heat. Spray the pork with olive oil spray and season with salt and pepper. Add pork to the pan and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 3 minutes to rest.
  • Step 2
    Meanwhile, to make the dressing, combine the lime juice, sweet chilli sauce, garlic, ginger and fish sauce in a small bowl.
  • Step 3
    Thinly slice the pork across the grain. Place the pork, pineapple, tomato, cucumber, watercress and coriander in a large bowl. Drizzle over the dressing and toss to combine. Divide among serving bowls and serve.
