Ingredients

  • 150 g caster sugar
  • 1/2 tsp ground cinnamon
  • 40 g brandy
  • 50 g water
  • 120 g orange juice (approx. 2 oranges)
  • 80 g lemon juice (approx. 2 lemons)
  • 1 yellow peach, stone removed and cut into eighths
  • 1 white peach, stone removed and cut into eighths
  • 1 nectarine, stone removed and cut into eighths
  • 1 cinnamon quill
  • 1 Pink Lady apple, core removed and cut into thin slices
  • 500 g lemonade or soda water, chilled
  • 750 g sparkling wine, chilled
  • 300 g ice cubes
  • 4 sprigs fresh mint, leaves only, for garnishing

Method

  • Step 1
    Place sugar, ground cinnamon, brandy, water, orange juice and lemon juice into mixing bowl and cook 5 min/90C/speed 1.
  • Step 2
    Place stone fruit, cinnamon quill and apple into a sealable container, then transfer brandy mixture in mixing bowl over the top. Allow to cool for approx. 20 minutes to room temperature before placing into refrigerator to chill overnight.
  • Step 3
    Place a large jug onto mixing bowl lid, then weigh lemonade or soda water and sparkling wine into it. Transfer into a punch bowl with the reserved chilled fruit-brandy mixture.
  • Step 4
    Add ice cubes to punch bowl, then garnish with mint leaves and serve immediately.
