Ingredients

  • 2 tablespoons olive oil
  • 500g lamb backstraps (eye of loin), cut into 2cm chunks
  • 700g (about 2 medium) eggplant, cut into 2cm chunks
  • 2 garlic cloves, finely chopped
  • 1 800g can diced tomatoes
  • 315g (1 1/2 cups) white long-grain rice
  • 1 bunch English spinach, ends trimmed, washed
  • 40g (1/4 cup) pine nuts
  • Salt & ground black pepper, to taste

Method

  • Step 1
    Heat 2 teaspoons of the olive oil in a large heavy-based saucepan over high heat. Add 1/2 the lamb and cook for 2-3 minutes or until just cooked. Remove from pan, place on a plate, cover and set aside. Repeat with another 2 teaspoons of olive oil and remaining lamb.
  • Step 2
    Add remaining olive oil to the saucepan and reduce heat to medium-high. Add the eggplant and cook, tossing occasionally, for 5 minutes or until the eggplant has softened slightly. Add the garlic and cook, stirring, for 2 minutes.
  • Step 3
    Add the tomatoes and bring to the boil. Cook, covered, stirring occasionally, for 10 minutes or until the eggplant is soft.
  • Step 4
    Meanwhile, cook the rice in a large saucepan of salted boiling water following packet directions or until tender.
  • Step 5
    Add spinach and lamb and cook for 2 minutes or until spinach has wilted and lamb is hot. Add pine nuts and toss to combine. Season with salt and pepper and serve immediately with rice.
