Ingredients

  • 4 x 95g cans Sirena Tuna Basil Infused Oil
  • 2 medium zucchini, thinly sliced lengthways
  • 1 large red onion, cut into wedges
  • 250g haloumi, sliced crossways
  • 1 tablespoon extra virgin olive oil
  • 1 radicchio, leaves separated
  • 80g baby spinach
  • 1/2 cup Sicilian olives
  • 1/2 cup fresh flat-leaf parsley leaves

Method

  • Step 1
    Drain tuna over a bowl, reserving oil for dressing. Set tuna aside.
  • Step 2
    Make Chunky Pesto Dressing Place basil, almonds, parmesan, lemon rind, garlic and half the reserved basil oil in a small food processor. Pulse mixture until very roughly chopped. Add remaining basil oil. Process until mixture is well combined, keeping nuts roughly chopped. Transfer to a bowl. Stir in vinegar. Season with salt and pepper.
  • Step 3
    Heat a large chargrill pan over medium-high heat. Drizzle zucchini, onion and haloumi with olive oil. Cook zucchini and onion, in batches, for 3 to 4 minutes each side or until charred and tender. Cook haloumi for 1 minute each side or until heated through.
  • Step 4
    Arrange radicchio, spinach, olives, parsley, zucchini, onion, haloumi and tuna on a serving platter. Drizzle with half of the dressing. Serve with remaining dressing.
