  • 100g packet wild rice
  • 200g snow peas, trimmed, thinly sliced
  • 1 bunch asparagus, trimmed, thinly sliced
  • 4 (about 125g each) turkey breast steaks
  • 2 tablespoons lemon juice
  • 3 teaspoons extra virgin olive oil
  • 1/2 teaspoon honey
  • 1 small bunch watercress, washed, leaves picked
  • 2 tablespoons chopped fresh chives
  • 70g dried blueberries
  • Lemon zest, to serve


  • Step 1
    Cook wild rice in a large saucepan of boiling water following packet directions. Drain well. Set aside to cool.
  • Step 2
    Meanwhile, cook snow peas and asparagus in a saucepan of boiling water for 2 minutes or until tender crisp. Refresh under cold running water. Drain well.
  • Step 3
    Use a rolling pin or meat mallet to pound the turkey breasts slightly. Spray a large non-stick frying pan with olive oil and heat over medium-high heat. Cook turkey for 3-4 minutes each side or until golden and cooked through. Slice.
  • Step 4
    Whisk together the lemon juice, oil and honey in a small bowl. Set aside. Place the cooked rice, snow peas, asparagus, watercress, chives and blueberries in a large bowl. Toss gently to combine.
  • Step 5
    Divide salad between serving plates.Top with turkey. Drizzle with the dressing and sprinkle with the lemon zest.
