  • 150g walnuts, chopped
  • 175g caster sugar
  • 1 eggwhite
  • 1/2 teaspoon ground cinnamon
  • 375g kataifi pastry*
  • 80g unsalted butter, melted
  • 3 teaspoons lemon juice
  • 2 teaspoons grated lemon rind


  • Step 1
    Preheat the oven to 180�C. Butter a medium baking dish.
  • Step 2
    Combine walnuts, 25g sugar, eggwhite and cinnamon in a bowl. Pull out a small handful of kataifi (keep remaining pastry covered to prevent drying out) and lay out in a square on the workbench.
  • Step 3
    Place a spoonful of filling in centre, fold in sides, roll into a cigar shape and place in baking dish. Repeat for remaining pastry and filling (don’t allow pastries to touch). Brush with butter, then bake for 30 minutes.
  • Step 4
    Increase oven to 200�C and cook for a further 5 minutes until golden.
  • Step 5
    Meanwhile, place remaining sugar, 300ml water, juice and rind in a pan.
  • Step 6
    Stir to dissolve sugar, boil for 10 minutes to thicken slightly, then pour syrup over pastries.
  • Step 7
    Serve with Greek coffee.
