Ingredients

  • 500g beef mince
  • 100g feta, crumbled
  • 1/2 cup grated mozzarella
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil
  • 8 shortcut bacon rashers, trimmed
  • 4 slices tasty cheese
  • 4 soft burger buns, split, toasted
  • 1/3 cup tomato relish
  • 30g mixed salad leaves (see note)
  • 1 Lebanese cucumber, cut into long ribbons
  • Oven-baked crinkle-cut chips, to serve

Method

  • Step 1
    Combine mince, fetta, mozzarella and egg in a bowl. Season with salt and pepper. Shape into 4 thin patties. Place on a large plate. Cover. Refrigerate for 30 minutes.
  • Step 2
    Heat half the oil in a large non-stick frying pan over medium heat. Add bacon. Cook for 3 to 4 minutes or until browned and crisp. Transfer to a plate. Cover to keep warm. Heat remaining oil in pan. Add 2 patties to pan. Cook for 3 minutes. Turn over. Place 1 slice of cheese on top of each patty. Cook for a further 3 minutes or until just cooked through and cheese starts to melt. Transfer to a plate. Cover to keep warm. Repeat with remaining patties and cheese slices.
  • Step 3
    Spread base of burger buns with half the relish. Top with salad, cucumber, beef patties, bacon and remaining relish. Sandwich with bun tops. Serve burgers with chips.
