  • 1 vanilla bean, split lengthways
  • 750ml (3 cups) milk
  • 125ml (1/2 cup) yellow box honey
  • 6 free-range egg yolks
  • 60g (1/4 cup) caster sugar


  • Step 1
    Use your finger or the end of a small knife to scrape the inside of the vanilla bean to remove the seeds. Place the seeds and the bean in a medium saucepan with the milk and honey. Cover and heat over low heat, stirring occasionally, for 20-25 minutes or until just simmering. Remove from heat and set aside for 1 hour or until cooled to room temperature.
  • Step 2
    Use a balloon whisk to whisk the egg yolks and sugar in a large bowl until thick and pale. Gradually whisk in milk mixture until well combined.
  • Step 3
    Transfer milk mixture to a medium heavy-based saucepan, and cook over medium-low heat, stirring constantly, for 15-20 minutes or until thick enough to lightly coat the back of a metal spoon. Remove immediately from heat. Transfer to a large bowl and set aside for 10 minutes to cool slightly. Cover and place in the fridge for 3-4 hours or until well chilled.
  • Step 4
    Remove the vanilla bean. Pour the chilled honey custard into a 1-litre (4-cup) freezerproof container, cover with a lid or foil, and place in the freezer for 4 hours or until frozen.
  • Step 5
    Remove from the freezer, and use a metal spoon to break the gelato into chunks. Transfer to the bowl of a food processor and process until completely smooth, but not melted. Return to the container, cover and place in the freezer for 3 hours or until frozen.
  • Step 6
    Transfer the container from the freezer to the fridge for 15 minutes to soften the gelato slightly before serving.
