4 small yellow squash, quartered

3 corn cobs, cut into 2cm-thick slices

2 small red capsicums, cut into 3cm pieces

Step 1Preheat oven to 200�C. Line a baking tray with baking paper.

Step 2Place squash, corn, capsicum and onion into a large bowl. Add oil and cumin seeds. Toss until well combined.

Step 3Arrange vegetables on baking tray. Bake for 20 to 25 minutes or until vegetables are tender. Serve with chicken breast fillets.
