  • 1/3 cup sesame seeds
  • 1/4 cup coriander seeds
  • 2 tablespoons cumin seeds
  • 1 cup pistachio kernels
  • 2.5kg piece seedless watermelon, peeled, chilled


  • Step 1
    Cook sesame seeds, coriander seeds, cumin seeds, pistachios, and salt and pepper in a non-stick frying pan over medium heat, stirring, for 4 to 5 minutes or until aromatic. Set aside to cool.

    Place into a food processor. Process until a coarse powder forms. Transfer to a bowl.
  • Step 3
    Cut watermelon into cubes. Dip the top of each cube into dukkah. Arrange on a serving plate. Serve with remaining dukkah.
