2 teaspoons olive oil

1/2 small red onion, thinly sliced

2 garlic cloves, crushed

1/2 cup roughly chopped walnuts

1/4 cup whole-egg mayonnaise

2 teaspoons wholegrain mustard

2 small (280g) red delicious apples, cored, halved, thinly sliced

50g mild blue cheese, chopped

Step 1Heat oil in a frying pan over medium-high heat. Add onion. Cook, stirring, for 2 minutes or until softened. Add celery and garlic. Cook, stirring, for 3 minutes or until heated through. Add 1/3 cup walnuts. Cook for 1 minute.

Step 2Meanwhile, combine mayonnaise and mustard in a large bowl. Add apple. Stir to combine.

Step 3Combine celery mixture and mayonnaise mixture. Top with cheese and remaining walnuts. Serve.
