  • 1 large (700g) eggplant, cut into 1.5cm-thick slices
  • 100ml olive oil
  • 2 cloves garlic, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon harissa
  • 2 roma tomatoes, peeled, seeded, finely chopped
  • Juice of 1/2 lemon


  • Step 1
    Preheat grill to medium. Brush eggplant with 2 tablespoons oil and grill for 16 minutes, turning halfway, until soft and golden. Cool slightly, then chop roughly.
  • Step 2
    Stir remaining oil, garlic, spices and harissa in a frying pan over medium heat for 2 minutes or until fragrant. Add eggplant and tomatoes, and cook for 10 minutes or until thick and well combined. Stir in lemon juice. Season.
