  • 700g sweet potato, peeled, grated
  • 1 egg, beaten
  • 1/4 cup plain flour
  • 60g unsalted butter, melted
  • 60ml (1/4 cup) olive oil


  • Step 1
    Preheat the oven to 150°C. Mix sweet potato with the egg, flour and melted butter. Season with salt and pepper. Heat oil in a non-stick frying pan over medium heat. Form the mixture into 6 patties and fry, in batches, for 2-3 minutes each side until crisp and golden. (Keep each batch warm in the oven.) Serve with the lamb.
