  • 500g (about 3) parsnips, peeled, cut into 2cm chunks
  • 500g (about 3) sebago (brushed) potatoes, peeled, cut into 2cm chunks
  • 120g eschalots (French shallots)
  • 80g butter, at room temperature, cubed
  • 2 tablespoons olive oil
  • 1 red onion, cut into wedges
  • 1 brown onion, cut into wedges
  • 125ml (1/2 cup) Massel beef stock
  • 1 tablespoon red wine vinegar
  • Salt & freshly ground black pepper
  • 4 (about 180g each) 2.5cm-thick beef ribeye (scotch fillet) steaks
  • 300g green beans, topped


  • Step 1
    Place the parsnips and potatoes in a medium saucepan and cover with plenty of cold water. Cover and bring to the boil over high heat. Cook for 10 minutes or until very tender. Drain well and return to pan.
  • Step 2
    Meanwhile, place eschalots in a heatproof bowl, cover with boiling water and set aside for 1 minute to loosen skins. Peel and halve if large.
  • Step 3
    Heat 40g butter and 1 tablespoon oil in a non-stick frying pan over medium-high heat. Add eschalots, red onion and brown onion. Cook, uncovered, stirring occasionally, for 10 minutes or until light golden. Stir in stock and vinegar. Increase heat to high, bring to the boil and boil, uncovered, for 2-3 minutes or until almost all the liquid evaporates. Taste and season with salt and pepper. Place in a warm medium bowl and cover.
  • Step 4
    Add the remaining oil to the frying pan and heat over high heat. Reduce heat to medium-high, add the steaks and cook for 3 minutes each side for medium or until cooked to your liking.
  • Step 5
    While cooking steaks, add remaining butter to parsnips and potatoes, and mash until smooth. Taste and season with salt and pepper.
  • Step 6
    Cook beans in saucepan of boiling water for 2-3 minutes or until tender crisp. Drain. Serve immediately with steaks, onions and beans.
