Ingredients

  • 700g pork and veal mince (see notes)
  • 1 egg, lightly beaten
  • 1 cup fresh breadcrumbs
  • 1 brown onion, finely chopped
  • 1 red capsicum, finely chopped
  • 1/3 cup finely chopped fresh basil, plus extra leaves to serve
  • 400g can diced tomatoes
  • 250g mini roma tomatoes, halved
  • 1 garlic clove, crushed
  • Grated parmesan, to serve
  • Steamed baby potatoes (see notes), to serve
  • 200g green beans, to serve

Method

  • Step 1
    Preheat oven to 200C/180C fan-forced. Grease a large roasting pan.
  • Step 2
    Combine mince, egg, breadcrumbs, 1/2 the onion, 1/2 the capsicum and 1/2 the basil in a bowl. Season with salt and pepper. Mix well. Transfer mixture to prepared pan. Shape mixture firmly into a 12cm x 22cm loaf shape.
  • Step 3
    Combine tomatoes, garlic and remaining onion, capsicum and basil in a medium bowl. Season with salt and pepper. Spoon mixture over and around meatloaf. Bake for 1 hour 15 minutes or until meatloaf is cooked through.
  • Step 4
    Sprinkle meatloaf with extra basil leaves and grated parmesan. Serve with steamed potatoes and beans.
