  • 40g butter
  • 1.2kg fresh pineapple, peeled, halved, cored, coarsely chopped
  • 80g (1/2 cup, lightly packed) brown sugar
  • 225g (1 1/2 cups) Muesli
  • 40g (1/4 cup) plain flour
  • 30g (1/2 cup) flaked coconut
  • 2 tablespoons honey
  • 40g butter, extra, melted
  • Greek-style natural yoghurt, to serve


  • Step 1
    Preheat oven 180�C. Melt the butter in a frying pan over medium heat. Add the pineapple and sugar and stir to combine. Cook, stirring, for 3 minutes or until sugar dissolves. Simmer for 10 minutes or until the pineapple is soft and syrup thickens.
  • Step 2
    Spoon the pineapple mixture into a 1.5L (6-cup) capacity ovenproof dish.
  • Step 3
    Combine the muesli, flour, coconut, honey and extra butter in a bowl.
  • Step 4
    Sprinkle muesli mixture over pineapple mixture. Bake for 15-20 minutes or until crumble is golden brown. Set aside for 5 minutes to cool. Serve with yoghurt.
