  • 1 1/2 cups mashed potato
  • 185g can tuna in olive oil, drained, flaked
  • 2/3 cup finely grated cheddar
  • 1/2 cup frozen corn kernels
  • 2 tablespoons finely chopped fresh flat-leaf parsley leaves
  • 1 green onion, finely chopped
  • 1 teaspoon finely grated lemon rind
  • 1/4 cup plain flour
  • 2 eggs, lightly beaten
  • 1 1/2 cups panko breadcrumbs
  • Olive oil spray


  • Step 1
    Place potato, tuna, cheddar, corn, parsley, onion and lemon rind in a large bowl. Season with salt and pepper. Stir to combine. Using damp hands, roll level tablespoons of mixture into balls. Place on a baking tray lined with baking paper.
  • Step 2
    Preheat oven to 220�C/200�C fan-forced. Place flour on a large plate. Whisk egg and 1 tablespoon water in a shallow bowl. Place breadcrumbs on a large plate. One at a time, roll balls in flour, shaking off excess. Dip in egg, then coat in breadcrumbs. Return to prepared tray.
  • Step 3
    Spray with oil. Bake for 15 minutes or until balls are golden and crisp. Serve or freeze until required (see notes).
