How are you doing? , I hope you’re having an incredible day today. Today, we’re going to make a special dish, Vegetable biryani. It is one of my favorites food recipes. For mine, I am going to make it a little bit tasty. This is gonna smell and look delicious.

Vegetable biryani is one of the most favored of recent trending foods on earth. It is simple, it is quick, it tastes delicious. It is enjoyed by millions every day. They are fine and they look wonderful. Vegetable biryani is something that I’ve loved my entire life.

Ingredients

  • 2 tablespoons oil
  • 1 eggplant, cut into 1cm cubes
  • 2 cups cauliflower florets
  • 1 large onion, thinly sliced
  • 3 garlic cloves, crushed
  • 2 teaspoons fresh ginger, grated
  • 1 long green chilli, thinly sliced
  • 1 tablespoon garam masala
  • 3-4 whole cloves
  • 3 teaspoons turmeric
  • 1 1/2 cups basmati rice, rinsed
  • 3 cups vegetable stock
  • 1/2 cup frozen peas
  • 1/3 cup currants

Method

  • Step 1
    Heat half the oil in a large saucepan on high. Saute eggplant and cauliflower for 3-4 mins, until golden. Transfer to a plate.
  • Step 2
    Heat remaining oil in same pan on high. Saute onion for 6-8 mins until golden. Add garlic, ginger, chilli and spices. Cook for 1 min, until aromatic.
  • Step 3
    Add rice, stirring to coat in mixture. Mix stock and bring to the boil on high. Reduce heat to very low and simmer, covered for 8 mins.
  • Step 4
    Stir in eggplant mixture, peas and currants. Cook, covered, for a further 3-5 mins, until vegetables are tender. Remove from heat and set aside for 5 mins. Serve topped with coriander and accompany with natural yoghurt.
