  • 60mls (1/4 cup) olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves, crushed
  • 1/2 teaspoon cracked black pepper
  • 350g firm tofu, cut into lcm-thick slices, halved
  • 8 (500g) egg tomatoes, halved
  • 1 tablespoon capers, rinsed, drained
  • 1 cup (160g) black olives
  • 1/4 cup chopped fresh Continental parsley
  • 1 small red onion, thinly sliced
  • 150g baby spinach leaves, washed, drained


  • Step 1
    Combine the olive oil, lemon juice and garlic in a large bowl. Add the cracked black pepper and tofu, cover, and set aside to marinate at room temperature for about 30 minutes.
  • Step 2
    Preheat a chargrill on medium-high. Drain the tofu and reserve the marinade.
  • Step 3
    Place half the tofu on the preheated chargrill and brush with the marinade. Cook for 1 minute, turn the tofu, brush with a little more marinade and cook for a further 1 minute. Remove tofu from the chargrill and place into a large bowl. Repeat with the remaining tofu.
  • Step 4
    Place the tomato halves, cut-side down, on the chargrill and cook over medium-high heat for 1 minute or until just warmed through. Add the tomatoes, capers, olives, parsley, onion and spinach to the tofu in the bowl and toss gently with the remaining marinade to combine.
