  • 4 (500g total) veal schnitzels (uncrumbed)
  • 2 teaspoons lemon juice
  • 1 cup dried breadcrumbs
  • 1/4 cup plain flour
  • 2 eggs
  • 1/4 cup vegetable oil
  • Lemon wedges, to serve
  • Steamed potatoes, to serve
  • Finely chopped flat-leaf parsley leaves, to serve


  • Step 1
    Place veal, in a single layer, on a baking tray lined with baking paper. Drizzle with lemon juice. Refrigerate for 20 minutes, turning occasionally.
  • Step 2
    Place breadcrumbs on a large plate. Place flour on a separate plate. Season with salt and pepper. Whisk eggs in a shallow dish.
  • Step 3
    Coat each piece of veal in flour, shaking off excess. Dip in egg. Coat in breadcrumbs. Place on a plate. Cover with plastic wrap. Refrigerate for 30 minutes.
  • Step 4
    Heat 1/2 the oil in a large non-stick frying pan over medium-high heat. Add 2 pieces of veal. Cook for 4 to 5 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to drain. Repeat with remaining oil and veal. Serve with lemon wedges and potatoes. Top with chopped parsley.
