  • 500g Desiree potatoes, peeled, chopped (see note)
  • 1 large brown onion, thinly sliced
  • 2 garlic cloves, quartered
  • 1L Massel chicken style liquid stock
  • 4 thick slices sourdough bread
  • 70g (2/3 cup) grated pizza cheese
  • 3 teaspoons fresh thyme leaves
  • 125ml (1/2 cup) pouring cream

    Place the sweet potato, potato, onion, garlic, and stock in a large saucepan. Bring to a simmer over medium-high heat. Reduce heat to low and cook, covered, for 30 minutes or until the vegetables are soft. Set aside for 10 minutes to cool slightly.
