Ingredients

  • 140g packet Werther’s Originals hard toffees
  • 400g good-quality milk chocolate, chopped
  • 1/3 cup thickened cream
  • 1/2 teaspoon vanilla extract
  • 50g good-quality dark chocolate, chopped

Method

  • Step 1
    Place toffees in a food processor. Process to fine crumbs. Combine 200g milk chocolate and cream in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth. Stir in vanilla. Stir toffee through chocolate mixture. Cover. Refrigerate for 3 to 4 hours or until firm.
  • Step 2
    Line a tray with baking paper. Using 2 teaspoons of chocolate mixture at a time, roll into balls. Freeze until firm.
  • Step 3
    Place remaining milk chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until melted and smooth. Using a fork, dip truffles in melted chocolate, shaking off excess. Return truffles to tray. Refrigerate until set.
  • Step 4
    Place dark chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 1 minute, stirring after 30 seconds with a metal spoon, or until melted and smooth. Spoon chocolate into a snap-lock bag. Snip off one corner and pipe chocolate over truffles. Refrigerate until set.
