  • 250g ripe tomatoes, washed, cut into chunks

  • 1 180g container cherry (small) bocconcini, drained
  • 2 tablespoons torn fresh mint leaves
  • 1 bunch rocket, ends trimmed, washed, dried
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • Salt & ground black pepper, to taste


  • Step 1
    Place the tomatoes, onion, bocconcini and mint in a bowl, and toss to combine. Divide the rocket among serving dishes. Spoon the tomato mixture over the top of each.

    Place the oil, vinegar, salt and pepper in a small screw-top jar. Shake to combine. Taste and adjust seasoning if necessary. Drizzle the dressing over the salads and serve immediately.
