Ingredients

  • 2 x 375g fresh veal and cracked pepper tortellini
  • 600ml light thickened cream
  • 3/4 cup Massel chicken style liquid stock
  • Zest and juice of 2 lemons
  • 2 tablespoons cornflour (see note)
  • 4 slices bread, cut into 1cm cubes
  • 1/2 cup finely grated parmesan cheese
  • 1/2 cup walnuts, roughly chopped
  • 40g butter, melted
  • 1/4 cup fresh parsley leaves, roughly chopped

Method

  • Step 1
    Preheat oven to 180�C. Place tortellini into a 26cm x 19cm base measurement ovenproof dish.
  • Step 2
    Combine cream, stock and lemon rind in a saucepan. Blend lemon juice and cornflour in a jug and stir into cream mixture. Cook, over medium heat, stirring, for 3 to 4 minutes or until sauce just comes to the boil. Season with salt and pepper. Pour warm sauce over tortellini.
  • Step 3
    Combine bread, cheese, walnuts and butter. Sprinkle over tortellini. Bake for 50 to 60 minutes or until tortellini is tender and bread topping is golden and crisp. Serve sprinkled with parsley.
